These cookies are a Christmas staple in our house. We always have to make a double or even a triple batch just so we don’t run out by the time the holiday finally comes around! Now, these cookies may look super rich, but they’re surprisingly light and feel like a brownie in your mouth. The chocolate chips scattered in the dough give a light crunch to contract against the smooth icing on top. The chocolate sprinkles are optional, but they add another nice texture.

Some advice: I would definitely make a double batch like we do because these cookies disappear very quickly. First, you’ll try one, and sneak another, and then decide that since you’ve already had two, why not have a third? We love this veggie dip in my family. We have it all the time: holidays, cookouts, get-togethers, or whenever we feel like filling up on lots of veggies. It's just so good that it's irresistible.

This dip is a winner all around. First, it's the best tasting dip around. It's the kind of thing you can't stop eating. Second, it's SUPER quick and easy to make. Just 4 ingredients mixed together and you're ready to go. Third, it's enough dip to satisfy a large crowd. The recipe makes 3 cups of dip; Enough to please all of your friends and family an still have some left over. Fourth, it stays fresh for days. The flavor is actually better the second day. Fifth, this dip is a bit different when compared to other veggie dips; Most dips we've have seen seem to be ranch based, but this veggie dip is made with italian dressing mix. A nice change of pace, we think. Sixth, this dip has a secret ingredient - cottage cheese. It adds a wonderful flavor and is a great way to cut the heaviness of the mayonnaise and sour cream.

So, we all love muffins, right? Typically sweet, cupcake-like breakfast treats that are sometimes filled with chocolate chips. What's not to love? They are a great and easy weekend breakfast and perfect for those busy holiday mornings. But sometimes it's nice to have a healthy option for a muffin. Here's where these healthy banana oat muffins come in.

I started by using mostly oat flour, which offers the nutritional benefits of whole grains. Just be sure to verify that the oat flour you are using is gluten-free. I used peanut butter instead of butter to give a boost of healthy fats. Mashed banana provides most of the sweetness with help from a little bit of honey and brown sugar. Applesauce helps to keep these muffins moist for days. The addition of walnuts and and raisins give another additional boost of healthy fats, iron, and potassium. All of this goodness is combined with cinnamon and nutmeg making these the perfect healthy choice. Try them for breakfast and see for yourself!

It's officially strawberry season!!!! Well, it's June 23rd as I'm writing this, so it might not be strawberry season anymore when you're reading it. 😂🍓 If you want a scrumptious, sweet, and homemade strawberry topping then you've come to the right place. There is nothing like a fruit topping made from fresh fruit of the season. Added bonus if you get to actually pick them yourself! Every summer my daughters and I go picking strawberries at our local berry farm and come home with tons of fruit. This year was no different; we came home with 2 huge buckets of strawberries...I believe it ended up being just about 10 pounds 😳.

This strawberry topping was on the top of my list to make. It's super quick and easy and soooo good. Nothing you buy from the grocery store can come close to the fresh taste of this topping. Just wash your berries, slice them up, throw them in a pot, do a little magic, and BAM! You have the perfect strawberry dessert topping.

Summer is finally here! That means it's time for fresh, sweet, summer fruits. Strawberries are the tell-all signal that summer is officially upon us. We can't wait to go to our local berry farm and pick our own berries in this house! I know you can get them at the grocery store, but those really can't compare to fresh ones. They're so much sweeter and juicier, it's unbelievable. Pure perfection.

These Gluten-free Strawberry Shortcake Cupcakes are the perfect dessert to utilize your fresh-picked berries. The vanilla cupcake is butter based, but there is also sour cream added in to pump up the moisture. I made these in a jumbo muffin pan so they would be the perfect size to make single serve shortcakes. Just slice them in half and add the strawberry topping and whipped cream -- super easy! The cake holds up beautifully to the strawberry topping and whipped cream. I even left a fully assembled shortcake in the refrigerator overnight and it was still perfect the next day. I'm sure these strawberry shortcake cupcakes will become a summer favorite for you, just like they are at my house.
