Butter pecan ice cream is (in my opinion) one of the best ice cream flavors! I love getting the chunks of pecans laced throughout the buttery ice cream base…so satisfying. So, we decided to create a cupcake inspired by this iconic ice cream flavor. These cupcakes have a brown butter cupcake base that has pecan pieces scattered within all while being topped with a seriously yummy brown butter marshmallow buttercream that’s as light as a cloud!
I have never seen/tasted a butter pecan cupcake before that actually tastes like buttery nutty goodness. It’s always a very lightly extract-flavored cupcake base that just tastes like vanilla. We wanted to avoid any sort of confusion with these cupcakes regarding the flavor and made sure that you will taste butter pecan in each and every bite, through and through! To achieve this punch of flavor though, you will have to put in a tiny bit of effort, but it is 100% worth it.
Gluten-Free Iconic Matilda Chocolate Cake
To whoever is reading this, I can PROMISE you that this will be the absolute best chocolate cake you will ever have in your entire life. No other cake can compare to this one. This cake is so unbelievably moist and light, but rich in serious chocolate flavor from both the cake and the buttercream, you’ll be addicted from the moment you take the first bite. The buttercream is sooooo silky and surprisingly not heavy at all despite the delectable flavor!
I am a sucker for double chocolate cake - especially this one. It’s just one of those craving itches that’s really hard to scratch unless you have it then and there. Whenever I see the chocolate cake in the movie Matilda I get that itch! It just looks so moist, fudgy, chocolaty, and delicious (despite looking rather gross while it’s all over Bruce’s face 😂). This is one of those cakes that you can take one slice, realize you can eat another, take another slice, eat it, and go back for a few more forkfuls of cake straight from the whole cake!! This can sometimes be a problem because it makes them super easy to eat - I could accidentally eat a few of these without thinking 😂 Not only are the cupcakes themselves super light, but the cinnamon marshmallow buttercream is sooooo dreamy and comforting - it’s a small taste of Fall that you can get at any time of the year. I love brownies…you love brownies…EVERYONE LOVES BROWNIES!! You wouldn’t be here if you didn’t! Well, I can confidently say that these gluten-free brownie are the best brownies that will ever grace your kitchen. They’re soooo thick, fudgy, and chocolaty, you can’t get enough of them! Not only are there milk chocolate chips laced through the batter, but there are also semi-sweet chocolate chips MELTED into the batter along with some Hershey’s cocoa powder, making these the ultimate chocolate-lover’s dessert or snack.
We’ve crafted these brownies to deliver you the perfect bite. They can be served room temperature, warm, cold, or even frozen! They don’t turn rock hard in the freezer, so storing them is a breeze. If a week later you’re craving one of these bad boys, you can just pop one out of the freezer and start snacking! Now, I can tell you that the ability to eat them frozen was intentional, but I would be lying 😂. That discovery was made when I was too impatient to let it thaw on the counter for a torturous 15 minutes before digging in, but hey, who can blame me?
