Gluten-free Healthy Banana Oat Muffins (Vegan Option Available)
These muffins are filled with healthy ingredients! Sweet bananas are mixed together with oat flour, honey, cinnamon, and nutmeg to make a wonderfully light, fluffy, and good-for-you muffin.
So, we all love muffins, right? Typically sweet, cupcake-like breakfast treats that are sometimes filled with chocolate chips. What's not to love? They are a great and easy weekend breakfast and perfect for those busy holiday mornings. But sometimes it's nice to have a healthy option for a muffin. Here's where these healthy banana oat muffins come in.
I started by using mostly oat flour, which offers the nutritional benefits of whole grains. Just be sure to verify that the oat flour you are using is gluten-free. I used peanut butter instead of butter to give a boost of healthy fats. Mashed banana provides most of the sweetness with help from a little bit of honey and brown sugar. Applesauce helps to keep these muffins moist for days. The addition of walnuts and and raisins give another additional boost of healthy fats, iron, and potassium. All of this goodness is combined with cinnamon and nutmeg making these the perfect healthy choice. Try them for breakfast and see for yourself!

TIPS AND TRICKS:
- Always preheat your oven.
- All refrigerated ingredients should be room temperature.
- You must use processed peanut butter like Jif, Peter Pan, etc.. The natural kind with the layer of oil on top will not work.
- Make sure your bananas are super ripe with lots of brown spots.
- Check to ensure that your oat flour is gluten-free (as well as every other ingredient you are using).
