The brown sugar topping is delicious and perfect if you aren't a fan of icing. It is great with a steaming, hot cup of coffee in the morning...who doesn't love cake for breakfast.
This cake bakes up quickly and easily. I don't know about you, but this is the only carrot cake I know of that uses boiled and mashed carrots. I guess Grandma was a trendsetter. The BEST Gluten-Free Magic Cookie Bars
Magic cookie bars are an oldie, but a goodie. The traditional recipe is made with a graham cracker crust for the bottom layer. I decided to to take it up a notch in the chocolate zone and make the first layer chocolate shortbread. It is a perfect base for these bars. Topping this off with chocolate chips, walnuts, coconut, and sweetened condensed milk makes these bars a chocolatey, chewy treat for all.
