Making these cut-out cookies has been a family tradition for as long as I can remember. When I was a kid my mom would make them for Easter; Lots of bunnies, chicks, and easter eggs. When I became a mom we continued the Easter tradition, but branched out and started making them for every holiday. My kids loved to decorate these cookies with anything and everything: Icing, sprinkles, candies, colored sugars, you name it - we used it.
It was always a great time making memories while we decorated (and ate) these wonderful soft and tender cut-outs. You're going to love these cookies - I promise! These cookies are a Christmas staple in our house. We always have to make a double or even a triple batch just so we don’t run out by the time the holiday finally comes around! Now, these cookies may look super rich, but they’re surprisingly light and feel like a brownie in your mouth. The chocolate chips scattered in the dough give a light crunch to contract against the smooth icing on top. The chocolate sprinkles are optional, but they add another nice texture.
Some advice: I would definitely make a double batch like we do because these cookies disappear very quickly. Breakfast cookies are a great way to start the day. They're like a bowl of oatmeal in a cookie form! These breakfast cookies are the first thing I created when I went gluten-free. I wanted something in the morning that wasn't overly sweet and would fill me up until lunch time. So, I got to work and after some trial and error I came up with these.
These breakfast cookies are soft, moist, not too sweet, and made with lots of healthy ingredients like peanut butter, oats, ground flax, applesauce, raisins, and chocolate chips. Added bonus - they stay fresh for days; no dried up, crumbly cookies here. I've come up with lots of variations sp there's something for everyone. What I have so far is original, walnut, chocolate chip, lemon blueberry, and banana nut. The possibilities are endless! You can stick with my combos or create your own with your favorite oatmeal add-ins.

Gluten-free Boozy Chocolate Cherry Cordial Cookies
Chocolate and cherry - what a great combination...especially when you add booze into the mix! These delicious cookies have been in my family for many years. We make them every year for Christmas and they're always a hit. So, when my daughter and I decided to make these gluten-free we thought "Why not change them up a little bit?". Hellloooo, Southern Comfort! A little, red, sweet gem soaked in booze and maraschino cherry juice. Combine this with chocolate and you definitely have a winner on your hands. A fudgy, chocolate, boozy cordial cherry cookie.
Of course, if you don't want to soak the cherries in Southern Comfort you don't have to. You can keep them classic by using plain maraschino cherries and they'll still be insanely delicious. They'll be perfect for the kiddos to enjoy as well!
