Gluten-free Oatmeal Raisin Cookies
These gluten-free oatmeal raisin cookies are just like my grandma used to make. They are soft, chewy, and loaded with delicious, sweet raisins. A mix of butter and cream cheese give these cookies a special flavor and texture that you and others will love!
There are just some classics that aren’t allowed to be messed with; oatmeal raisin cookies being one of them. They’re just so delicious and hard to resist in my opinion! The chewiness of the oatmeal, the warmth of the cinnamon, and the slight freshness from the raisins make up the perfect bite.
Gluten-free Peanut Butter Easter Eggs
For these Peanut Butter Easter Eggs, I decided that I would make it a mission for myself to make them as similar as I could to a Reese's Egg because they aren't gluten-free. I wanted to eliminate some of the sugar that is usually in traditional eggs because they are sometimes way too sweet. So, I added a tiny bit of salt and butter and cut the powdered sugar down by a ton. You can dip them in chocolate the traditional way, but I got a silicone egg mold from Amazon to make them look a little bit fancier!
Gluten-free Walnut Buttercream Thumbprints
These Gluten-Free Walnut Buttercream Thumbprints are the most requested cookie in our house all year long, not just Christmas time. The cookie base is not too sweet, so the addition of the walnuts that toast while they bake and the smooth vanilla buttercream balance everything out so nicely. Not only do these elements give these cookies an outstanding flavor, but a wonderful texture as well.
There really is nothing more Christmas-y than toasted nuts and sweet cookies. These cookies give you the best of both worlds all in one bite. I have no doubt that people will be asking you for the recipe once they try one of these beautiful creations; I know because it happens every year to me! The second best part about these cookies is that they’re extremely simple to make and only require a few ingredients that you have around the house. Simple and tasty - there’s nothing better.
Gluten-free Hot Cocoa Cookie Cups
These Gluten-Free Hot Cocoa Cookie Cups are the best, simplest, and most delicious holiday treat you can make. Since the base is a simple chocolate chip cookie dough, it’s great to make with the kiddos! The filling only has 3 ingredients too, so it whips up in no time - perfect for those busy December days. If you have kids, they may want to leave a few out for ol’ Saint Nick on Christmas Eve! 🎅🏼☕️
These cookie cups are great to bring to any holiday gathering because they are so dang simple!!! All of your friends will be swooning over these little babies because of how adorable and tasty they are. There’s really nothing better than a hot cocoa on a cold winter day, so these are the perfect addition to your holiday dessert table. So, put this recipe on your “To Do” list this holiday season!
Gluten-free Chocolate Hermits
These cookies are a Christmas staple in our house. We always have to make a double or even a triple batch just so we don’t run out by the time the holiday finally comes around! Now, these cookies may look super rich, but they’re surprisingly light and feel like a brownie in your mouth. The chocolate chips scattered in the dough give a light crunch to contract against the smooth icing on top. The chocolate sprinkles are optional, but they add another nice texture.
Some advice: I would definitely make a double batch like we do because these cookies disappear very quickly. First, you’ll try one, and sneak another, and then decide that since you’ve already had two, why not have a third? These Gluten-Free Chocolate Hermits are so addictive, you’ll never get enough of them!
Strawberry Dessert Topping
It's officially strawberry season!!!! Well, it's June 23rd as I'm writing this, so it might not be strawberry season anymore when you're reading it. 😂🍓 If you want a scrumptious, sweet, and homemade strawberry topping then you've come to the right place. There is nothing like a fruit topping made from fresh fruit of the season. Added bonus if you get to actually pick them yourself! Every summer my daughters and I go picking strawberries at our local berry farm and come home with tons of fruit. This year was no different; we came home with 2 huge buckets of strawberries...I believe it ended up being just about 10 pounds 😳.
This strawberry topping was on the top of my list to make. It's super quick and easy and soooo good. Nothing you buy from the grocery store can come close to the fresh taste of this topping. Just wash your berries, slice them up, throw them in a pot, do a little magic, and BAM! You have the perfect strawberry dessert topping.
Gluten-free Strawberry Shortcake Cupcakes
Summer is finally here! That means it's time for fresh, sweet, summer fruits. Strawberries are the tell-all signal that summer is officially upon us. We can't wait to go to our local berry farm and pick our own berries in this house! I know you can get them at the grocery store, but those really can't compare to fresh ones. They're so much sweeter and juicier, it's unbelievable. Pure perfection.
These Gluten-free Strawberry Shortcake Cupcakes are the perfect dessert to utilize your fresh-picked berries. The vanilla cupcake is butter based, but there is also sour cream added in to pump up the moisture. I made these in a jumbo muffin pan so they would be the perfect size to make single serve shortcakes. Just slice them in half and add the strawberry topping and whipped cream -- super easy! The cake holds up beautifully to the strawberry topping and whipped cream. I even left a fully assembled shortcake in the refrigerator overnight and it was still perfect the next day. I'm sure these strawberry shortcake cupcakes will become a summer favorite for you, just like they are at my house.
Gluten-free Gingerbread Cupcakes
It's holiday baking time and you need to get those Christmas treats ready! So, why not have some classic gingerbread this year? Better yet, how about all of those delicious flavors packed into a cupcake? These cupcakes are made with butter, molasses, ginger, cinnamon, nutmeg, and allspice. They're a wonderful combination of everything Christmas. We topped these spicy cupcakes with our sweet vanilla buttercream, but added just a touch of lemon flavor.
You could top these cupcakes with chopped walnuts for some crunch, a sprinkle of cinnamon, or a mini gingerbread cookie just like we did. They're delicious no matter what way you choose to serve them. Treat your guests to something special this Christmas and make these gingerbread cupcakes!
Luscious Gluten-free Lemon Bars
Lemon bars are a classic dessert. They are so light and just melt in your mouth; So delicious that you'll have a hard time just eating one tiny square. They are sweet with just a tiny zing from the fresh lemon juice. That leads me to saying that I highly suggest you use fresh lemon juice for this recipe because it makes a world of a difference. Juicing and zesting only takes a few seconds to do and adds loads of lemony-flavored goodness! So, next time you're at the store pick up a few lemons and bake up a batch of these amazing lemon bars. 🍋
Gluten-free Lemon Shortbread Cookie Sandwiches
Shortbread cookies have been a favorite in my family for many years. We are also big fans of lemon. So, why not combine the two and create a delicious, buttery, melt-in-your-mouth shortbread cookie and add a bright, creamy, lemon filling. A perfect combo! These cookies are a little more effort than other cookies, but trust me, they are worth the effort. The cookie dough is only 7 ingredients and mixes up super quick and easy. They're so perfect for the summer, or any season really! Do yourself a favor and give these sweet treats a try. I bet they'll become one of your favorite desserts!
Gluten-free Apple Pie Bars
If you love apple pie, then you'll love these apple pie bars. These bars are made with a delicious shortbread crust that melts in your mouth. Next, the fresh apples are cooked down to be soft with classic fall flavors like butter and cinnamon. The crumb topping is the last addition to these bars, adding a sweet, buttery, delicate crunch that is just like a crumb pie topping.
These apple pie bars are great for a party or get-together because you can easily cut them into squares to serve a crowd. Besides being super easy to make, they're super delicious - whether you serve them warm with a scoop of vanilla ice cream or even just plain!
THE BEST Gluten-free Texas Sheet Cake
It looks good, doesn't it? This is another recipe that I got from my mom. She LOVES chocolate and so do I. Maybe she passed her love of chocolate down 🤷🏻♀️. This cake is so moist and rich that it may become your favorite chocolate cake of all time. It mixes up fast and while it's baking you can gather all of your ingredients for the frosting. Then you pour that creamy, rich frosting right on top of the cake and let it cool until you cut it. It's so delicious that you'll want to keep sneaking small pieces every time you walk by it! It's perfect for parties, great to take to cookouts, and really, just perfect.
