This cake is so unbelievably moist and light, but rich in serious chocolate flavor from both the cake and the buttercream, you’ll be addicted from the moment you take the first bite. The buttercream is sooooo silky and surprisingly not heavy at all despite the delectable flavor!

I am a sucker for double chocolate cake - especially this one. It’s just one of those craving itches that’s really hard to scratch unless you have it then and there. Whenever I see the chocolate cake in the movie Matilda I get that itch! It just looks so moist, fudgy, chocolaty, and delicious (despite looking rather gross while it’s all over Bruce’s face 😂). This is one of those cakes that you can take one slice, realize you can eat another, take another slice, eat it, and go back for a few more forkfuls of cake straight from the whole cake!! Then you pour that creamy, rich frosting right on top of the cake and let it cool until you cut it. It's so delicious that you'll want to keep sneaking small pieces every time you walk by it! It's perfect for parties, great to take to cookouts, and really, just perfect.

Gluten-free Carrot Streusel Cake

This carrot cake recipe was my grandmother's. She used to make it in a large sheet pan and everyone loved it, so making this cake gluten free was a no-brainer for me. The brown sugar topping is delicious and perfect if you aren't a fan of icing. It is great with a steaming, hot cup of coffee in the morning...who doesn't love cake for breakfast.

This cake bakes up quickly and easily. I don't know about you, but this is the only carrot cake I know of that uses boiled and mashed carrots. I guess Grandma was a trendsetter. Once the carrots are ready, just mix up the batter, sprinkle on your glorious walnut topping, and drizzle with melted butter. Sweet cake perfection.
