  1. Preheat oven to 350ºF and prepare baking sheets by lining with parchment paper.
  2. In small bowl whisk together the flour, baking soda, baking powder, cocoa, and salt. Set aside.
  3. In bowl of stand mixer cream the peanut butter and sugar until smooth. Add in the sweet potato puree, applesauce, and vanilla and mix to combine.
  4. Pour the dry mixture into the wet mixture and mix until almost combined. Add in the chocolate chips and mix until combined.
  5. Using a #30 cookie scoop (about 2 Tbsp.) scoop mounds of dough about 3 inches apart on prepared cookie sheets. Bake for 11 minutes. Cool for 4 minutes on trays before removing to wire rack to cool completely.
Icing
  1. In small, nonstick pot melt together the butter, milk, and cocoa, whisking constantly until smooth.
  2. Once smooth, take the pot off of the heat and whisk in the powdered sugar 1 cup at a time, then the remaining 1/4 cup. Add in the vanilla and whisk to combine.
  3. Spread icing on to the tops of all of the cookies and let dry completely before serving or storing.
