Perfectly buttery, salty, and soft.
5 ingredients - that's all you need to mix up the pretzel dough. The best thing about these pretzels is that there is no yeast. This means that you don't have to wait around all afternoon for the dough to rise...you get to eat these gluten-free pretzel bites quickly! Basically, you add all of your ingredients into the bowl of your stand mixer, mix it up, and that's it - you're good to go. Give this dough a 10 minute rest before you roll and cut it into little bit size pieces, give the pieces a little dip into the boiling water/baking soda mixture, sprinkle with coarse salt, and pop them in the oven. When they're done they get a brush of butter. That's all it takes.
FYI, these pretzels are so good that you might accidentally eat the entire batch before you even take them off the sheet pan...I speak from experience. While they are delicious on their own, they're even better when dipped into an easy, cheesy sauce. The dip is made up of minimal ingredients as well - two cheeses, milk, spices, and hot sauce. If you don't like classic cheese sauce you could use any dipper you want like classic or spicy mustard, a sweet glaze, or even take it up a notch with some beer cheese. The toppings are also not limited to plain salt; you could use cinnamon sugar, everything bagel seasoning, or even bacon bits. The possibilities are endless! Another delicious take on these pretzel bites are to make mini pretzel dogs by wrapping a mini hot dog with a strip of pretzel dough <-- My personal favorite.

TIPS AND TRICKS:
- Always preheat your oven.
- If the baking soda/water mixture begins to bubble over just turn the heat down on the stove.
- No need to let the sour cream and yogurt to come to room temperature; it's fine straight from the refrigerator.
- If the dough is too sticky to form into a ball add one tablespoon of flour and mix in.
- Do not skip the baking soda/water bath, but do not do it longer than 30 seconds because of the metallic taste that baking soda can leave! Stick to the 10-15 seconds.
