Jumbo Banana Chocolate Swirl Muffins

- Preheat oven to 425ºF and prepare jumbo muffin tin by lining 6 cups with jumbo muffins papers.
- In large bowl, whisk together the flour, baking powder, salt, sugar, and brown sugar. Set aside.
- In separate bowl, whisk together oil, butter, vanilla, milk, eggs, and mashed bananas.
- Add the dry mix to the wet mix and whisk to combine. Remove 1 1/2 c. of the batter and place into a separate bowl. Into this bowl, add the cocoa and water, and whisk to combine.
- Using a cookie scoop or Tablespoon measuring spoon, spoon 3 Tbsp. of the plain banana batter into the bottoms of each liner. Now, spoon 3-4 Tbsp. of the chocolate batter on top of the plain batter already inside the liners. Add any remaining plain batter on top of each muffin (should be around 1 Tbsp. each muffin). Gently swirl batter together using a skewer.
- Bake for 6 minutes. After 6 minutes, reduce oven temperature to 350ºF and bake for an additional 20-22 minute or until toothpick inserted into the center comes out clean.
