This Gluten-free Oreo Extreme Cheesecake Pie is a great way to enjoy those classic sandwich cookies. The bottom is an Oreo and butter crust, which is absolutely delicious, and guess what? It's the only element of this cheesecake pie that you bake! Next comes a layer of milk chocolate ganache (which is never a bad thing). Then we have a no-bake cheesecake layer that's filled to the brim with Oreo chunks. Last, but not least, a Gluten-free Oreo buttercream topped with even more crushed Oreos....Do you see why we named this "Gluten-free Oreo Extreme Cheesecake Pie"? Oreos everywhere!!!

TIPS AND TRICKS:

- Always preheat your oven.

- A food processor is the preferred method to crush the Oreos. If you don't have one you can use a rolling pin. Be sure to crush the cookies as fine as possible for the crust and the icing.

- When making the ganache, the chocolate chips don't need to completely melt in the microwave. Stop just before they are all melted and stir it until the residual heat melts the chips the rest of the way.

- Allow the ganache and crust layers to firm up in the refrigerator. This prevents the next layer from sinking into the ganache.

- Leave some bigger chunks of Oreos in the cheesecake layer; It looks and tastes great.

- If you want to pipe a border around the top edge of the dessert, use a large open tip so Oreo pieces don't clog your piping tip/bag.
