Gluten-free Deep Dish Peanut Butter Pie

Chocolate and peanut butter is one of the greatest combinations known to man. When you combine those flavors into a pie form, it's just heavenly. It doesn't get much better than peanut butter pie. It's always a crowd-pleaser and leaves everyone requesting seconds.

This pie starts with a delicious crust made with crushed gluten-free chocolate chex cereal. We added a little bit of cocoa powder, vanilla, brown sugar, and some melted butter to hold it all together. It's the perfect bottom to this creamy pie. Next, we added a layer of our milk chocolate honey ganache. It's the perfect compliment to peanut butter. Next comes the no-bake peanut butter cheesecake layer that mixes up in just a few minutes. It's super easy and super delicious! Last, but not least, lots of candy toppings consisting of chopped Reese's Cups, milk chocolate chips, and chocolate shavings. Add as much as you like! No one will be judging you. 😁

Gluten-free Zucchini Pancakes

When it's time to harvest zucchini it usually means you have A LOT of them, right? When the zucchini in my dad's garden is ready we know to prepare ourselves for lots of it. So, I usually make zucchini bread (regular and chocolate), whichever I'm in the mood for. However, these zucchini pancakes seem to be pretty popular in my house. They are always the first thing to be requested at harvest time. They are definitely a family favorite. You only need to mix together 6 ingredients and you're ready to go. They are quick, easy, and make a great side dish or a fun snack.

I based this recipe off of my mom's potato pancake recipe that she made constantly when I was a kid. So, that means lots of onions that give these pancakes tons of flavor. A little bit of baking powder helps keep them light and fluffy on the inside. Lightly frying keeps them crispy on the outside. They are so delicious that when I make them they disappear as soon as they are finished. Sprinkled with salt and served with a dollop of sour cream, these pancakes are the perfect way to use up that surplus of zucchini you have from the garden.

Mississippi mudslide is one of those desserts that you can't stop eating. It is just so good - chocolate, walnuts, coconut, marshmallow, and even more chocolate! How you could go wrong? This recipe has been in our family since I was a teenager. My mom used to make it when my friends came over and everyone loved it. If you love chocolate and marshmallow then you must try this gluten-free mississippi mudslide. The bottom layer is a light brownie-like cake stuffed with coconut and walnuts. Then comes the layer of sweet, stretchy marshmallow fluff. Last, but not least is the smooth, creamy, delicious chocolate icing. The perfect topping for this mudslide.

Once you cut a slice into this mudslide you will see why it has it's name. After a few minutes the marshmallow fluff layer along with the chocolate icing starts to ooze, drip, and slide around. Are you ready for a treat? A chocolate treat to be exact. We are HUGE fans of crumb cake in my house. New Jersey style crumb cake as always been a favorite. It was something we always got while vacationing at Long Beach Island on the Jersey Shore. On one of those trips we visited a local bakery to scout out some goodies. We were looking for regular crumb cake, but this bakery had chocolate crumb cake which I had never seen before. Of course, we had to try some. It was delicious, but we were never lucky enough to have it again after I went gluten-free.

After I went gluten-free I decided to try and recreate that super delicious chocolate treat. It starts with a layer of chocolate cake with a tiny bit of coffee mixed into the batter to enhance the chocolate flavor. It's also made with peanut butter instead of butter or oil. You can't really taste the peanut butter, but it does keep the cake perfectly moist, rich, and gives it a fudge-like texture. Now, let's talk about the crumbs; If you like crumb topping then you will love chocolate crumb topping. Big chunks of buttery, sweet, chocolate crumbs with mini chocolate chips mixed in for an added punch of chocolate flavor. All of this goodness is topped with a milk chocolate drizzle.
